Which fog value (near/far, pow, max) do I have to change in the CK to get rid of the overly bright LOD Water? And do I have to increase or decrease it?

Either increase the far fog distance considerably or darken the fog colour (try around 50 % first). Most likely you will need to adapt some of your ENB settings as well to compensate for the changes in the final image.
